While eggs have been my breakfast of choice these last few weeks, I was hoping to spice it up a bit with the seasons changing…although, I don’t think Florida will have the same cool fall mornings that I am used to!
If you’ve been following me on Instagram, you know I aim to hit 30 grams of protein for breakfast each morning. I am 31 years old and doing everything I can to preserve muscle as I age—that is why I worked out a delicious hot breakfast option for those craving a Reese’s cup.
The better news is that they also contain 11 grams of fiber (which means they keep you full and support gut health) and reheat really well–making this an easy meal prep option for my teacher and corporate friends running out the door in the morning.
My protein powder of choice at the moment is Truvani. It is a plant based protein that actually tastes delicious and is the perfect amount of sweet. Oh, and they recently released a Pumpkin Spice version…so you know what my next batch will be!
Regarding toppings, I opted for chocolate chips and a little peanut butter, but the base of this recipe should work with pretty much any anything! Oh, and pro tip, peanut butter is pretty energy dense (it has a lot of calories) so for my friends watching their intake like me, try melting it in the microwave! A little goes a long way and you can still absolutely get your PB fix.
